Lemony Asparagus and Penne Pasta

Ingredients
- 12 ounces asparagus spears, fresh or frozen
- 8 ounces pasta, penne rigate, uncooked
- 3 tablespoons mayonnaise, low-fat
- 2 tablespoons vegetable broth, low sodium
- 2 tablespoons extra virgin olive oil
- 2 teaspoons lemon juice
- 2 teaspoons Dijon mustard
- 1 teaspoon garlic, chopped
- 1/4 teaspoon black pepper
- 1/3 cup cheddar cheese, low-fat
- 1/2 cup green onion, chopped
Preparation
- Bring a large covered saucepan of water to boil over high heat. Wash and trim asparagus and cut diagonally into 2-inch pieces.
- Add the pasta to the boiling water and cook according to package directions for al dente, adding the asparagus about 3 minutes before the pasta is done.
- Drain pasta and asparagus in a colander, cool under cold running water, and drain again. Set aside.
- In a large bowl, whisk together the mayonnaise, vegetable broth, oil, lemon juice, mustard, garlic and pepper.
- Add the pasta and asparagus to the dressing, and toss to coat well. Sprinkle cheese and onions over pasta mixture.
- Divide among 4 plates and serve with a calorie-free beverage.
