Tasty Tuesday!

So, along with my Shakeology and working out, I am trying to eat better too! Beachbody provides a free 30 day meal planner! It is awesome. So here is one of my FAVORITE recipes so far!

Lemony Asparagus and Penne Pasta
Prep Time: 5 minutes or less
Total Time: 20 minutes
Cook Time: 15 minutes
Serves : 4

Ingredients
  • 12 ounces asparagus spears, fresh or frozen
  • 8 ounces pasta, penne rigate, uncooked
  • 3 tablespoons mayonnaise, low-fat
  • 2 tablespoons vegetable broth, low sodium
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons lemon juice
  • 2 teaspoons Dijon mustard
  • 1 teaspoon garlic, chopped
  • 1/4 teaspoon black pepper
  • 1/3 cup cheddar cheese, low-fat
  • 1/2 cup green onion, chopped 

Preparation
 
  • Bring a large covered saucepan of water to boil over high heat. Wash and trim asparagus and cut diagonally into 2-inch pieces.
  • Add the pasta to the boiling water and cook according to package directions for al dente, adding the asparagus about 3 minutes before the pasta is done.
  • Drain pasta and asparagus in a colander, cool under cold running water, and drain again. Set aside.
  • In a large bowl, whisk together the mayonnaise, vegetable broth, oil, lemon juice, mustard, garlic and pepper.
  • Add the pasta and asparagus to the dressing, and toss to coat well. Sprinkle cheese and onions over pasta mixture.
  • Divide among 4 plates and serve with a calorie-free beverage.
It is seriously awesome :)
